t is on the initiative of Jean-Claude RODRIGUEZ, Chef at CHATEAU SAINT-MARTIN TRENCAVEL in MONTREDON, close to CARCASSONNE, that 8 founder members (4 chefs and 4 amateurs), created this association which they wanted to be composed in a first stage of :

 80 ACTIVE MEMBERS DIGNITARIES divided into :
- 6 french Active Members Dignitaries Founders
- 20 Chefs
- 54 notable persons
mainly from the department of Aude and also from the Departement of Haute-Garonne.

 MEMBERS Of HONOR including :
- important persons in a limited number
- eminent members and partner members in an unlimited number.

 BRANCHES (SUB-OFFICES) in France |
 |
 EMBASSIES in different countries all around the world, managed by a Chef who has been approved and established by the AUC. For example we can quote the one created in JAPAN by 2 Active members Dignitaries Founders, those created in Canada , Singapore and in Germany, and those in process in Belgium and in the USA.

 he actions led by the members of the AUC have for purpose to promote the Cassoulet and all the ingredients which take part in its composition and its preparation all around the world. The aim is : |

  to gather men and women for whom quality ryhme with the love of well-being, well-behaving and well-eating. |

 to organize and to take part in gastronomic, cultural, artistic, touristic meatings only to support the development of "Its Majesty Cassoulet" and to make known the local chefs Maîtres Cassoulet.

 he logical consequence was the creation of  , a road which goes from Lézignan Corbières ( Aude) to Toulouse ( Haute-Garonne) and all along which are installed the chefs Maîtres Cassoulet who commit themselves to respect the Charter. |

 he emblem of the AUC is la Cassole, which was already used in the ancient times. This dish was imitated very often but never replaced. It is into the cassole that the the ingredients  which compose this unequalled meal, simmer. The Cassoulet is appreciated by all the lovers of good food who congratulate themselves shouting ACO V'AIMI. |

Prosper Montagné
was born
on november 14, 1865
in Carcassonne.
His father pushed him into learning how to cook.
He visited prestigious restaurants and then devoted himself to the culinary literature.
He opened a restaurant in Paris.
He died on April 22, 1948 in Sevres.
He wrote Le Festin Occitan in 1929 :
